This is Kane's recipe for Red Velvet Cake out of the WWF Cookbook "Can You Take the Heat?" I tried this over xmas and I have to say it's delicious!"Like Kane, this recipe is a little complex. And like Kane, the finished product is a work of art. you've got to be in the baking mood, but it is well worth the effort. Cake:
1 (10 ¼-ounce) package fudge marble cake mix
1 teaspoon baking soda
2 eggs
1 ½ cups buttermilk
1 (1-ounce) bottle red food coloring
Frosting:
5 tablespoons flour
1 cup milk
1 cup (2 sticks) butter or margerine, softened
1 cup sugar
2 teaspoons vanilla
1. Preheat oven to 350 degrees.
2. To make the cake, in a large bowl combine the cake mix and baking soda. Add the eggs, buttermilk, and food coloring. With a beater, blend on low until moistened, then beat on high for 2 minutes.
3. Pour the batter into 2 greased and floured 9-inch cake pans and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
4. Let cool for 10 minutes. Remove the cake from the pans to a wire rack to let cool completely.
5. To make the frosting, whisk the flour and milk in a saucepan over medium-low heat until smooth. Bring to a boil. Whisk and stir for 2 more minutes, or until the sauce has thickened. Cover the mixture and refrigerate.
6. In a mixing bowl, cream the butter and sugar. Add the chilled milk mixture and beat until fluffy, about 10 minutes. Stir in the vanilla.
7. Frost the top of one of the cake layers. Carefully place the second layer on top of the first. Frost the sides of the cake and then the top.
Makes 6 to 8 servings
Optional: You may prefer to use Betty Crocker's soft whipped vanilla icing. Delicious and easy!
